In the Pixar movie Ratatouille, there’s a scene where Remy the rat takes a common “peasant dish” to a new level and wows a notorious food critic. Ratatouille is simple and cheap to make, but if you use this fancy method of cooking the ingredients you’ll elevate your simple dish to “confit byaldi.”All you need are some tomatoes, zucchini, yellow zucchini, eggplant, onion, red bell peppers, garlic, and a way to thinly slice all your vegetables.
