Don't Throw Out Those Cauliflower Leaves, They're Healthy and Delicious

Do you ever peel away the leaves surrounding a head of cauliflower, only to be slightly disappointed by what’s leftover? It may seem disheartening to toss out all of that plant matter, but you don’t have to; you can eat it instead.

Instead of throwing out or composting cauliflower leaves, just slice them up and roast or saute them along with the rest of the vegetable. Need recipe inspiration? Try this creamy roasted cauliflower risotto from Food 52. Alternatively, you can set aside a few leaves each time you cook a cauliflower, until you have enough for a big batch of crispy cauliflower chips.
