It’s easy for me to remember to grab pantry staples like garlic and onions at the store, but other larder items aren’t always so lucky; in particular, I always seem to forget shallots. Thankfully, if you’re making a recipe that calls for shallots and your kitchen is temporarily without, we’ve learned an easy substitute for them.
Inspired by one of the tips in Julia Child’s Mastering the Art of French Cooking, The Kitchn’s Dana Velden has come up with a super-smart substitution for shallots:
I have modified [Julia Child’s] tip over the years by simply placing the minced onion in a sieve and, holding it over the sink, pouring just-off-the-boil water over and through it for about 15 seconds.
