Sure, that extra-large bag of tortilla chips probably seemed like a great idea at the time...until you find yourself with a half-finished bag of stiff, unyielding corn triangles that you can’t bear to throw away. Fear not, though: it’s possible to give stale tortilla chips a new lease on life.
It’s possible to restore stale corn chips in a toaster oven or microwave, but if you don’t have either of those appliances, there are still plenty of ways to make use of them. Epicurious proposes a number of other ways to extend the life of totopos. Our favorite idea: Simmer them in a spicy red chile sauce with queso fresco and Monterey Jack cheese, then add a fried egg for a classic Mexican breakfast, chilaquiles. If you’re more the scrambled egg type, there’s a recipe for a classic Tex-Mex dish, migas — chips scrambled with eggs and chorizo — in there, too.
