Homemade granola may be vastly superior to the boxed stuff, but the hour of work required by most recipes means you’ve got to plan ahead. If you’re not so good at forethought, don’t worry! Food 52 has you covered: their granola can be made in less than half the time, using your stove top rather than oven.
To make super fast (and infinitely customizable) granola, you’ll need:
- A wide pan
- 2 tablespoons of fat (butter, coconut oil, whatever)
- 2 teaspoons sweetener (maple syrup is my favorite)
- 1/2 cup of rolled grains
- Nuts and other add-ins
- Spices
Click the link below for the full recipe (and ingredient ideas), but the basic sequence of events is this: Add your fat and sweetener to your pan over medium-low heat and blend until everything is nice and liquidy. Add in the grains and a pinch of salt and toast until golden (8-10 minutes). Mix in whatever nuts and seeds you like and cook for another couple of minutes. Transfer to a baking sheet and sprinkle with your favorite spices (or toasted coconut and chocolate chips!) and let cool for 5-10 minutes. Break it up and throw it in some yogurt or milk and you have a tasty homemade breakfast. (Or anytime snack; granola shouldn’t be confined to the morning.)
