Use Your Spiralizer to Make Beautiful Crispy Potato Pancakes

The vegetable spiralizer may have been invented so you could make plant parts into healthy impostor noodles, but I’m here to suggest you use it for a higher purpose. I am here to suggest you use it for latkes.

Though I have nothing against a “zoodle” (besides the name), I’m not exactly excited by them. I’m sure they have their time and place, but they are not “pasta.” (Though they seem to be very popular.) If you were at some point seduced by the idea of a healthier, greener “noodle” and purchased a spiralizer (only to grow very tired of zucchini noodles) do not despair. Your curly-wurly vegetable contraption is good for so much more.

Food & Wine has a lot of great suggestions along these lines (see below), but my favorite is their picturesque potato pancakes (latkes). Not only do the thin, curly strands crisp up in the most delightful way, but they look super pretty. I’m so infatuated with them, I’m almost tempted to buy a spiralizer.
