A little reimagining can make leftovers pretty tasty. Here’s a simple recipe for easily upgrading leftovers after you’ve heated them up.
Epicurious offers an easy, three-step recipe for creating your own pan sauce to drizzle on top of leftover meals. You start with the pan used to reheat those leftovers, assuming there’s a small amount of fat or oil to make your sauce. From there:
- Toss some “aromatics” into the pan: garlic cloves or rosemary, for example. If necessary, you can toss in some olive oil to get it going. Give it a few minutes.
- Add a splash of wine or juice: just enough to get it simmering.
- Add a cup of broth and reduce. If you feel like it, toss in some salt, a tablespoon of butter and/or some lemon juice.
This is essentially making a gravy for your leftovers, which is a straightforward enough idea, but I like that this recipe is so simple and quick, and you can make it straight from the pan after reheating left over food. Check out the link below for more detail.
