Mastering the grill means being able to use it to cook more than meat and kabobs. Get creative and throw some fruit on there, too. The heat will caramelize the natural sugars and enhance the flavor.
Alton Brown has a great list of fruits with firm flesh that hold up well to the heat of the grill without getting mushy:
- Grapefruit
- Peaches
- Pineapple
- Mango
- Bananas (in peel)
- Honeydew melon
While Alton Brown seems to prefer grilled fruit for dessert (and you can marinate yours for extra flavor), you can also use grilled fruit for savory dishes. For example, you could use your grilled melon in a salad with feta and herbs or use grilled peaches to add a smoky sweetness to a salsa.
